Corn fritters are so versatile, they go with just about anything. I used to take a few, wrap them in a napkin, and shove them in my pocket. By the time I got to where I was going, I had a big grin on my face and nobody knew why.
CORN FRITTERS
1 egg
¼ cup milk
1 ¼ cups flour
½ teaspoon salt
1 tablespoon unsalted butter, melted
1 cup creamed corn
Oil for deep frying
Yields 24 small fritters.
Combine all ingredients except the oil. Drop by the tablespoonful into deep oil and fry until golden brown.
